
Lion's Mane Crab Cakes
Ingredients

2lb Lion's Mane mushroom

4 egg (or flax egg)

2 cup panko breadcrumbs

4 cup onion (finely diced)

1/4 cup mayonnaise or vegan mayonnaise

4 tsp Worcestershire sauce

1 Tbsp old bay seasoning
-
4 tsp dijon mustard
-
1/4 cup fresh parsley (finely chopped) or 1 tbsp dried parsley

1 tsp salt (to your taste)

1 tsp black pepper

Coconut oil (to fry cakes)

Instructions

Hand shred Lion's Mane mushroom into small pieces. Smaller pieces help the cake stay together.

In a large bowl, mix together egg, mayonnaise, onion, Worcestershire sauce, old bay seasoning, Dijon mustard, parsley (finely chopped), salt and pepper.

Mix in Lion's Mane Mushroom.

Mix in Panko breadcrumbs.

Form patties about ½ inch thick,

Fry patties on medium heat for approximately 2-3 minutes per side. Should be golden brown and cooked throughout.

Garnish with lemon wedges and enjoy!
