Lion's Mane Crab Cakes

Ingredients

  • 2lb Lion's Mane mushroom

  • 4 egg (or flax egg)

  • 2 cup panko breadcrumbs

  • 4 cup onion (finely diced)

  • 1/4 cup mayonnaise or vegan mayonnaise

  • 4 tsp Worcestershire sauce

  • 1 Tbsp old bay seasoning

  • 4 tsp dijon mustard

  • 1/4 cup fresh parsley (finely chopped) or 1 tbsp dried parsley

  • 1 tsp salt (to your taste)

  • 1 tsp black pepper

  • Coconut oil (to fry cakes)

  • Lemon

Instructions

  • Hand shred Lion's Mane mushroom into small pieces. Smaller pieces help the cake stay together.

  • In a large bowl, mix together egg, mayonnaise, onion, Worcestershire sauce, old bay seasoning, Dijon mustard, parsley (finely chopped), salt and pepper.

  • Mix in Lion's Mane Mushroom.

  • Mix in Panko breadcrumbs.

  • Form patties about ½ inch thick, 

  • Fry patties on medium heat for approximately 2-3 minutes per side. Should be golden brown and cooked throughout.

  • Garnish with lemon wedges and enjoy!
